Mushroom Quiche

Mushrooms, bacon, blue cheese

Ingredients:

Filling

250 g mushrooms
100 g bacon
100 g blue cheese
2 onion
2 eggs
1 teaspoon salt
1/2 teaspoon pepper

Pastry

2 glasses of flour
150 g butter
3-4 tablespoons of water
pinch of salt

Directions:

Pastry:

- Preheat the oven to 200 degrees C. Prepare the pastry – cut butter to little cubes, add a bit cream, flour and mix with hands until even. Press pastry into a quiche dish (24cm – 28cm) and pre-bake for 10 minutes in oven.

Filling:

- Heat oil in a large nonstick skillet over medium high heat, add mushrooms and chopped onion. Cook, stirring frequently, until mushrooms first release their liquid and then liquid evaporates and mushrooms are dark golden brown, 8 to 10 minutes. Place bacon slices on the pastry then cover with half of the mushrooms mixture. Now place on the blue cheese slices and rest of the mushrooms. Pour on the eggs/cream mixture. Bake at 200 degrees C for 40 minutes, or until the custard has completely set.
