400 g spinach
100 g leek
200 g feta cheese
200 g cottage cheese
2 eggs
1/2 tbs pepper
1/2 tbs nutmeg |
Pastry
2 glasses of flour
150 g butter
3-4 tablespoons of water
pinch of salt

Directions:
1. Preheat the oven to 200 degrees C.
2. Prepare the pastry – cut butter to little cubes, add a bit cream, flour and mix with hands until even.
3. Saute chopped leek for few minutes in skillet, add spinach, stir until spinach is dry.
4. Add cottage cheese and feta cubes and cook for 5 minutes.
5. Press pastry into a quiche dish (24cm – 28cm) and bake for 10 minutes in oven.
6. Sprinkle blue cheese over crust, top with spinach mixture, pour over with beaten eggs and cream mixture.
7. Bake at 200 degrees C for 35-40 minutes, or until the custard has completely set. |
